And there you have it, a lovely juicy tasty piece of roast meat with all the flavour of the barbecue.
This pair of metal rails holds charcoal in place against the side of a kettle grill to allow you to cook large roasts and whole chickens in the centre. By placing a drip pan in the centre of the grill to capture fat and juices from the meat, it prevents dangerous flare-ups from the coals below and stops the meat charring. The meat is surrounded with heat from all sides cooking with a slow even heat like an oven. Heat from the racks rises, reflects off the inside of the grill, and surrounds the meat with heat from all sides, much like a convection oven but with the improved texture and flavour of grilled food. To adjust the temperature inside the grill, simply add more coals.
