You can use the funnels for either direct cooking or indirect. For indirect cooking, such as roasting large joints of meat or grilling burners and sausages, leave the funnel in the place with the large opening to the top and the BBQ acts as an oven with the heat circulating around the BBQ meaning no food requires turning and it will cook evenly without burning. For direct cooking, simply flip the funnel over to concentrate the heat, perfect for stir frys, cooking at high temperatures with a griddle or pizza stones.
